Sangiovese that's fairly rustic by Aussie standards. I want my Sangio to experience things in the vineyard and winery, I want it on the vines for an eternity after it starts asking to be picked so it feels the warmth of the sun and the chill of the morning, I want it developing and growing it's complexity... it's boring when it's allowed to be lazy, and it's so good at growing, it usually ends up lazy.
 
In the winery I want it to breathe, I want it vulnerable, I want it to develop it's own story. I'm not concerned with clean and healthy, I want character.
 
Entirely old oak, because that's not the point, and I'm borrowing wisdom for Chianti and Chianti Riserva. Wild yeast, very slow start to the ferment. Just letting Sangiovese be Sangiovese.
